Herbs de Provence, Cooking with Herbs and Olive Oil
Roast lamb chops with garlic baked with
rosemary, thyme, and bay leaf.
In the markets you find bunches of bay leaf, thyme and rosemary ( traditional Herbes de Provence)
tied together. After placing two of these together in a steel roasting pan surrounding several heads of
garlic and moistening with olive oil, you place a layer of rosemary over that and then place the lamb
on top of the rosemary after first smearing it with olive oil and herbs de Provence.
Serve Camargue sea salt at the table for individual tastes.
Bake in a 350 over for 12 minutes per pound, turn three times to bake evenly. Remove the lamb
and cover with foil while continuing to roast the garlic if necessary until it is soft. Place the garlic
and lamb on a serving platter and keep this warm while making a sauce in the pan with the left
over juices. Spoon off excess oil and strain the sauce to remove the sprigs of Thyme and
Rosemary. Serve on the side with the lamb.

The Herbes de Provence mix varies with the regions and packagers but Thyme, Rosemary, and
savory are key and grow wild and abundantly in the hills of Provence . Marjoram is also often in the mix
which could also include Basil, Bay Leaf, and Oregano.

Ingredients
herbs de provence pinch
extra virgin oil 2 ozs
rice vinegar 1 oz
lemon juice 1/2 teaspoon
honey 1/2 teaspoon
*orange/ginger/sugar syrup 2 tablespoons (*mix one to one of OJ and sugar, add sliced ginger,
heat for about 10-15 minutes until a light syrup forms. Strain and use reserved sauce.
Fresh chopped basil 1 teaspoon
mix all ingredients together and alter the balance of sweet and sour to your taste. Drizzle over
salads or serve on the side.
